Matcha Cake w/ Lemon Curd
My boss/friend’s birthday was coming up and jokingly asked if I would be bringing anything in to work for her…”jokingly.” I had just bought some matcha from the Asian market (something I had been looking for for about a month), so I decided to try this out based off of this recipe (x)! Side note, had wanted to make lemon curd a while so this just was a great coincidence! I didn’t follow the recipe exactly because I only wanted to make a small treat for a single person, but it seemed to have come out alright! The coloring was a little off and I wish I had thought of adding vanilla extract, but the final result wasn’t too bad for something I just winged.
Matcha Cake: matcha (about 2 tbsp), flour (2 tbsp), sugar (1tsp), confectioner sugar (1.5 tbsp), 1 egg, splash of milk

P.S. The hole for the lemon curd was kind of weird because I tried to make a bunny shaped whole with a food cutter I had, but, alas, did not turn out the way I wanted!
